Do You Know You Can Eat Squash Leaves?
Do you know you can eat all parts of squash?
I grew up eating steam cooked squash leaves wrap dish in Korea.
This summer I planted summer squash seeds and they became two bush looking healthy squash plants. The squash leaves I ate in Korea were from the vine kind, not the bush kind, so I did some internet research. Surprisingly not only we can eat leaves, we can eat all parts of squash ( I don't know whether we can eat a root part, though).
First, I had to try a pretty yellow flower. I ate it with spicy and sweet pepper sauce. Yum...it tasted like Romain lettuce.
( It is best to cut them at midday when the petals are open, leaving one inch of stem. Gently rinse your blossoms in a bowl of cool water and store in a bowl of ice water in the refrigerator until you are ready to use them. The flowers can be stored up to 1 or 2 days. One way to fix them is to sauté the blossoms in olive oil and garlic for a few minutes and serve.) You can also batter and fry the blossoms in a little oil. If you’ve never eaten squash blossoms, you are in for a real treat.
Second, I ate steam cooked stems and leaves with cooked rice and bean paste sauce... It was just like I expected!!! It's acquired taste.
I may put some leaves into a soup for a test...
Hopefully I will have self control not to eat all of my leaves ...poor squash plants.
If you have any chance to try out let me know what you think.
